The case for espresso blends
Blends combine beans from several origins to create a balanced, consistent cup. That consistency is gold in a busy cafe - the shot you pull on Monday tastes the same on Sunday. Blends also give roasters flexibility: when one origin is scarce or expensive, they adjust the recipe without changing your flavor profile. For milk drinks, a well-built blend holds up beautifully. The case for single origin (SOE)
Single origin espresso showcases one farm or region's character - a Yirgacheffe with lemon and tropical fruit notes, or a Kenya Nyeri AA with berry and brown sugar. SOEs are perfect for pour-over bars, coffee enthusiasts, and cafes that want a rotating "featured" espresso. The trade-offs: more variability, and usually a slightly higher cost per kg.
Which should you serve?
Most successful specialty cafes run a house blend as their workhorse espresso, then rotate an SOE as a feature. It gives you consistency for your core drinks and excitement for adventurous customers. If you are just starting, begin with a solid blend and add an SOE later.
