How to Choose Coffee Beans by Taste
Walk into any wholesale coffee catalog and you will see dozens of beans: washed Yirgacheffe, natural Sidama, dark-roasted blends, single origins. How do you pick the ones your customers will love? Start with taste.
Step 1: Know your flavor preferences
Coffee flavors fall into a few families. Fruity and floral beans - Ethiopian Yirgacheffe or Sidama - taste like berries, citrus, jasmine or tropical fruit. Chocolate and nutty beans - Brazilian, Colombian or Yunnan lots - taste like cocoa, hazelnut and toast. Sweet and caramel profiles sit in between, with brown sugar, honey or maple syrup notes. Decide which family your menu is built around, then choose beans in that family.
Step 2: Understand roast levels
- Light roast - preserves bright acidity and floral/fruity notes; best for pour-over and filter.
- Medium roast - balanced sweetness and body; the sweet spot for espresso and milk drinks.
- Dark roast - bold, chocolatey and low acidity; classic for espresso with milk.
Step 3: Match origin to flavor
Origin is the fastest shortcut to flavor. Ethiopia - floral, citrus, berry. Kenya - bright berry and brown sugar with lively acidity. Colombia - balanced, caramel, medium body. Brazil - chocolate, nutty, low acidity. Yunnan, China - clean, tea-like, nutty. Blends combine two or more origins to hit a specific flavor target and stay consistent.
Step 4: Consider your brewing method
Espresso rewards dense, balanced beans with good crema potential - medium to dark roasts. Pour-over and filter highlight delicate florals and acidity - light to medium roasts. Milk drinks pair best with chocolatey, full-bodied beans that hold up to milk.
